Brassica oleracea var. acephala
Collard Greens. Hardy, leafy green vegetable with large, tender leaves and a mild, slightly sweet flavor. Leaves can be harvested continuously for cooking, sautéing, or fresh salads. Extremely cold-tolerant, flavor improves after light frost. Grows best in full sun with fertile, well-drained soil. A great fall/winter vegetable for the northwest if planted in late summer.
