Artichokes are perennial vegetables that thrive in well-drained soil with half-day to full sun. Mature plants reach 4–5 feet in height, with harvest often beginning during the first year. Although dieback occurs after a hard frost, mulching allows growth in areas down to –10°F. Artichokes are generally free from pests and diseases, making them low-maintenance for long-term production up to 5 years per plant.
